The authentic version of the Chian local variety, from old vines. Particularly intense mouthfeel, complex intensity, full body and purple color. The vinification of this natural dry red wine begins with the grapes being left in the sun for about a week. Fermentation takes place with the marc remaining in the tank for about twenty days. The pressing process follows. No oenological material of any kind (e.g. enzymes, yeasts) is added during winemaking, while cooling and filtering processes are not applied during stabilization.
