Taking a different approach to the raw material, the pomace from the beloved Assyrtiko grape—sourced from Chios wineries—served as the base. This material was obtained following a vinification process typical of natural wines, specifically "orange wines," which imparted secondary aromas to the pomace, complementing the variety's characteristic aromatic profile.
The result is a tsipouro with a distinctive character. It offers aromas of baguette and white bread dough, along with the chlorophyll notes of crushed fresh green beans; meanwhile, its secondary aromas possess an oily quality, evoking notes of *stakovoutyro* (traditional Cretan butter), Kytherian rusks, and corn breadsticks, lending a syrupy flavor profile. Citrus fruits dominate the finish, with grapefruit, mandarin, and blood orange taking turns on the palate.
It pairs ideally with seafood, fried fish, salted fish, vegetable fritters, salads, wild greens, and *anthotyro* cheese.
